Calcium gluconate, with the molecular formula of Ca(C6H11O7)2, is a white crystalline or granular powder with a melting point of 201°C (decomposition), odorless, tasteless, easily soluble in boiling water (20g/100ml), slightly soluble in cold water (3g/100ml, 20°C), and insoluble in organic solvents such as ethanol.
The aqueous solution is neutral (pH about 6-7). Calcium gluconate is mainly used as a calcium fortifier and nutrient, buffer, curing agent, and chelating agent for food.
